One Pan Meal: Tomato Basil Chicken & Truffle Parmesan Potatoes

If there’s one thing I hate about cooking, it’s cleaning up afterwards. That’s what makes one pot/pan meals so enticing – not only are they incredibly simple and delicious, but clean-up is a breeze. This entire meal was prepared using one pan, a sharp knife, a bowl for mixing, and one cutting board. That’s it! Preparation was super easy and it took all of five minutes to wash the dishes.

This recipe is healthy, tasty, and makes clean-up a breeze.

This one pan meal includes two delicious recipes – tomato basil chicken and truffle parmesan potatoes. Each is delicious on its own, but they taste fantastic together.

Instructions
  1. Wash and dry potatoes to remove any dirt.
  2. Dice potatoes into similarly sized pieces, around 1/4 inch thick. Put the diced potatoes in a bowl.
  3. Drizzle with truffle oil, salt, and pepper. Toss to coat.
  4. Spray pan with non-stick cooking spray. Then place the potatoes in the pan, spreading evenly over 1/2 side for more even browning.
  5. Slice chicken into 1/4" thick slices or medallions. Season with salt and pepper. Place on 1/2 of pan, spreading evenly.
  6. Dice basil leaves into small pieces and sprinkle on top of chicken.
  7. Slice tomatoes and place on top of chicken and basil. Season again with salt.
  8. Bake at 400 degrees Fahrenheit for 40 minutes or until potatoes are tender and chicken reaches an internal temperature of 165 degrees Fahrenheit.
  9. Sprinkle potatoes with shaved parmesan cheese prior to serving.
Recipe Notes

For best results, use a pan with a removable rack to allow potatoes to crisp on top and bottom. This will also allow the juices from the tomatoes and chicken to drain.
